WHAT TO EAT IN NEGROS ISLAND:

A FOODIE'S GUIDE TO NEGRENSE CUISINE

Negros Island, located in the central part of the Philippines, is not only a beautiful place for its stunning landscapes and fun festivals but also a paradise for food enthusiasts. Known as the Sugar Capital of the Philippines, most of the dishes in Negros are prepared with sugar, which is great for me as I have a sweet tooth. Here are some delicious dishes and desserts that make Negros a true culinary delight.

CHICKEN INASAL

This barbecue-style chicken is a Negros Island classic. Marinated in a blend of local spices and herbs, the chicken is grilled to perfection, resulting in a smoky, flavorful dish. Head to local eateries or street food stalls for an authentic taste of this Negrense favorite.

ADOBO SA ASUKAL

Negros Island puts a sweet twist on the classic Filipino adobo by infusing it with muscovado sugar. The result is a harmonious blend of savory and sweet, creating a flavor profile that is uniquely Negrense. This dish is a testament to the region's deep connection with sugar production.

KANSI

Kansi is a savory and sour soup that combines the richness of beef shank, bone marrow, and flavorful batwan fruit. Often likened to sinigang, Kansi has its unique Negrense twist, making it a must-try for those seeking bold and robust flavors.

BATCHOY

Originally from Iloilo, Batchoy has made its way to Negros Island, where it has become a beloved comfort food. This noodle soup features a rich and savory broth, pork offal, and egg noodles. It's the perfect dish to warm your soul, especially on a rainy day.

PIAYA

No visit is complete without trying piaya. This sweet flatbread is filled with muscovado sugar, giving it a distinct flavor. Piaya is a delightful snack that showcases the island's sugarcane heritage.

DULCE GATAS

Satisfy your sweet tooth with Dulce Gatas, a local milk candy made from carabao's milk. This sweet treat is often crafted in various flavors, including ube (purple yam) and langka (jackfruit).
